As if history came back and places didn’t change their landscape, Ballabio offers once more an ancient and timeless label: Clastidium.
A remarkable cuvée, created by the inspiration of the winery’s founder, Angelo Ballabio, for years has been the most fragrant flower in the anthology of offers of this Winery. This is a modern product, but evoking a village in the heart of the Oltrepò Pavese, a tradition, a passion that has remained unchanged... for a century.

Grape harvest:
Traditional by hand, in crates

Vinification:
Gentle pressing of the grapes after short cold maceration on peels.
Slow fermentation of the decanted must at a controlled temperature.
Ripening in stainless steel vats on its own yeasts for at least 6 months.
Ageing in a bottle for years to develop and evolve the characteristic bouquet with its particular aroma.

Notes for tasting:
Straw yellow colour with faint golden reflections, to the nose it offers flowery fragrances, slightly vanilla-like and complex, and a broad, velvety but lively palate with great structure and persistence.
